Mediterranean Grouper Recipe

Prep-Work

Start by preheating your oven to 400°.

Thinly slice your Cherry Tomatoes & Stuffed Olives.

Mince your garlic and add it to your olive oil.

Slice your lemon.

Rinse your Grouper Filets & pat them dry with a paper towel.

Season the filets with the Delicae Gourmet Sea Salt Rub, Paprika and Garlic.

Start With Your Side Dish

Because this is the dish that will take the longest, we suggest you start with it.

In a baking dish, add whole cherry tomatoes.

Drizzle them with Artisan Olive Oil, and then add your minced garlic and crushed red pepper flakes.

In the center of the dish, place your block of feta.

Place the baking dish in your preheated oven, and set the timer for 25 minutes.

While that bakes, go ahead and boil your pasta. Rinse the pasta while saving some of the pasta water.

Once the tomato & feta is done baking, add it to a large skillet with your pasta and the reserved pasta water, and stir until it’s completely combined.

Cooking Your Grouper

In a well-oiled cast iron skillet or baking dish, place your seasoned fillets.

Squeeze your lemon slices on top, and drizzle with Artisan Olive Oil.

Place a sprig of fresh dill on top of your filets.

Place in the preheated oven, and bake for about 15 minutes. (this can vary depending on the thickness of your filet) For best results, use a thermometer and cook to an internal temperature of 145°

Remove from the oven, and plate with your pasta, and you’re done.

Pair With Wine

We paired the Kris Pinot Grigio with this dish.

This wine is pale yellow in color and is very lean and refreshing on the palette with aromatics of acacia flowers & citrus.

It complimented the Mediterranean flavors of the dish very well, and didn’t overpower the Grouper’s taste.
